This somewhat glutinous course lets you in on where to feast on Nagoya’s famous udon noodles in a miso stew as well as fermented food and drink like local sakes and Moriguchi-zuke pickles as you walk along famous tourism spots with ties to Japanese unifier and hero Tokugawa Ieyasu, Nagoya Castle and the Tokugawa Art Museum. Ieyasu was actually a health nut and is known for having loved Aichi’s bean miso. Remember this as you stop by various locations around Nagoya City brimming with fermented food culture.

The Tokugawa Art Museum

Look over keepsakes of Tokugawa Ieyasu like swords, tea items, pictures, and other daimyo feudal lord-related pieces as this art museum’s main displays. Over 10 thousand artifacts make up the museum’s collection, including the internationally acclaimed Japanese national treasure Tale of Genji Illustrated Scrolls as you gain an insight into the Owari Tokugawa clan.
The museum’s shop offers Ieyasu Unifier Ramen (Red Miso), using the Aichi miso Ieyasu loved, among other fun items.

Founded in 1924, Yamamoto Sohonke’s udon noodles in miso stew—one of the trademarks of Nagoya cuisine—is one of its crowd pleasers. The taste of a rich blend of Kakukyu Hatcho Miso from Okazaki City, Aichi Prefecture and local white miso with 100% Japanese-produced wheat noodles is unmistakable. Enjoy the flavors of this long-standing restaurant beloved by all Nagoyans.

Nagoya Castle / Hommaru Palace

Tokugawa Ieyasu completed construction of this castle in 1610, and even today, it remains a posterchild of Nagoya sightseeing. While destroyed during the ravages of war, the Kinshachi golden tiger-fish roof ornaments atop the fifth story of the castle keep were reconstructed in 1959. In 2018, gorgeous Hommaru Palace, referred to as a masterpiece of early modern castle palaces, was also restored. The Nagoya Omotenashi Bushotai Warrior Brigade greets you within the castle premises.

Owariya, Kinshachi Yokocho Location

Owariya was founded in Nishi-Biwajima Town, Kiyosu City and has continued operation for 150 years. Its signature product is a Nara-zuke style pickling of Moriguchi Daikon radishes (Moriguchi-zuke pickles), which are marinated in quality sake lees and mirin lees for three years without a single additive.
These Moriguchi-zuke pickles are a famous product of the Nagoya area, purchased by the load as souvenirs and gifts. The attached restaurant lets you eat dishes using lees-marinated fish and other tasty dishes.
